If You Don't Take A Picture, Did It Really Happen?

First of all Happy Thursday! All week I've been feeling kind of off a day, Tuesday felt like Monday and so on. I am thrilled that today is Thursday because it's one day closer to the weekend AND because Seth gets back from his training in Indy tonight (insert long sigh of relief).

My Kitties also cannot wait for Seth to get home. As crazy as it sounds I think they have like separation anxiety or something with him because they go NUTS when he isn't home. They also have a tendency to not let me sleep past 6 a.m. (which if you know me is WAY too early).  They also convinced me this morning that someone had broken in to our house so I had to get up and check every room, but in reality the incessant meowing and loud noises were just their plea to get me out of bed.

I also realize that I sound like a crazy cat lady, and well quite frankly I just may be. Oh well it's kind of fun, and if I'm a crazy cat lady then Seth is most definitely a crazy cat man ;)

Wow so my mind is all over the place today! I promise their is a point to this post so don't lose hope in me quite yet. Last night I made the most delicious black bean and corn salsa, but in a bloggers nightmare I was so excited that I forgot to take ANY pictures. How in the world am I supposed to give you step by step directions on this delicious treat without pictures? And this brings up the real question, if you don't take a picture did it really happen?? 

Well for the record it did really happen and luckily I got the recipe off of Pinterest (like most recipes I use). 
Black bean and corn salsa recipe. Perfect for cookouts and summer gatherings!

Ingredients

1 can black beans (rinsed and drained)
1 can corn (drained)
1 cup chopped tomatoes
1/4 c purple onion
approx. 1/2 C chopped cilantro
1 tsp cumin
1 tsp lemon juice


It is really just as easy as chopping the ingredients up and mixing them together! It has such a fresh taste and is good for you too!

Annual Scarf Exchange + The Best Cake Pop I've Ever Had

Hello lovely readers! It's Monday again (doesn't it always feel like Mondays come super fast), but I had such a fabulous weekend :)

On Saturday I got together with my favorite girls (Stacie, Maddie, Laken, and Brianna) for our 2nd annual scarf exchange. To see our picture from last year go here.

Maddie decked our her basement with all kinds of treats. My favorite was her Buffalo Chicken Dip.

We had a BLAST catching up and reminiscing old memories, it almost felt like we were back in high school (I can't even count the number of times we hung out and stayed the night at Maddie's house in Middle and High School).

The Exchange

For our exchange we each bring a scarf and then draw numbers to see the order we pick scarves. The first round everyone opens one of the gifts, and then the second round you can steal a scarf from someone if you want. All the scarves are always super cute so it's a win no matter which one you get ;). The craziest thing happened this year, we all ended up getting the scarf from the same person we got last year. I must say Brianna has very good taste in scarves. 

I got lucky and ended up with 2 scarves :)
After the exchange we attempted to get a good picture of us all in our scarves. (the key word there is attempted!) We definitely got some funny ones though.



I think this one wins as my favorite!



We were trying to get all the scarves in the picture as you can see we pretty much failed, but we did get one good one!

 My New Found Love for Cake Pops

During our get together Laken surprised us by giving us each a cake pop, at first we were all a little confused, but then she clarified for us. She "popped" the question to us and asked us to be Bridesmaids in her wedding next September! I think we were all screaming in excitement for a good 30 seconds.

It was such a great night! Whoever said you don't stay friends with your high school besties never met us ;)

Just Keep Pinning- Favorite Recipe's of 2014



We live in a world where Pinterest is always at your fingertips! I get on Pinterest almost every single day. Let's be honest my life wouldn't be the same without it ;) Today I want to share my top 5 favorite recipes I found on Pinterest. 1.) Slow Cooker Cheesy Chicken and Rice

I actually just made this for dinner last night and it was a hit! I was able to put the chicken in the crock pot on my lunch break and when I got home (4 hours later) it was cooked. The chicken didn't dry out at all which was great. It made a very large portion so there is plenty for left overs. I will definitely make this again. 

2.) Smothered Chicken Casserole

 This was as delicious as it looks! I wouldn't categorize it as quick and easy, but every once in a while it is worth the effort! :)

3.) 3-Ingredient Easy Baked Ravioli

Baked Ravioli. One pinner said, " A regular in my weeknight dinner rotation.  So good. And literally took us 3 minutes to put together. This recipe rocks."

The Title describes this perfectly. It was SO EASY! I mean literally 3 minutes of time to put it together and then put it in the oven. Seth and I are all about quick and convenient so this recipe is great for us.

4.) Hawaiian Ham and Cheese Sandwiches

This recipe is a great way to do a sandwich a little differently. Instead of just your regular ham and cheese you get a delicious little baked slider. I would highly recommend this recipe :)

5.) Corn Casserole

Seth always teases me that I have an obsession with corn casserole, but its only because it's DELICIOUS! Seriously, it's supposed to be a side and I was eating enough for a full meal.

Tis The Season!




Hello Everyone! Last night I went over to my sister Anna's house to make some delicious Christmas treats. We had such a great time just chatting, catching up, and of course creating delicious desserts. Here is a list of some of my favorite treats we made with links to the recipe :)

Girls Night! + My Favorite Jalapeno Recipes

Friday Fun

Last night I had the pleasure of going to my sister Amanda's house and hanging out with her and her 3 beautiful daughters. She had promised them they could have a hot chocolate party and when Mayleigh (8) called me and invited me over I just couldn't say no. 

When I got there Mayleigh and Braylin (6) already had their candy canes out and ready to go.

Needless to say they were VERY excited :) Amanda told them they would have to wait a little bit so we chatted and caught up on our days. Next thing I know I go to the living room and someone got tired of waiting... literally.

She woke up just long enough to make me promise I would wake her up when the hot chocolate was ready. So Amanda and I got all the stuff around and made the hot chocolate, and as promised I woke Braylin up and she came out to the kitchen to sit with us.


She was out cold before she could even drink any hot chocolate, but I can speak for her when I say it was delicious!

I couldn't get over how adorable that mug was, Amanda got it at a garage sale! what a find.

Now as promised I will share my favorite jalapeno recipes. One of which just came out of the oven a few minutes ago ;)

Jalapeno Bacon Cheese Ball:

Saying this cheese ball was delicious would be an understatement. I made it for the first time this year for my families Thanksgiving celebration. I got the recipe from Brown Eyed Baker and LOVED it. It was nice because it was super easy, and didn't end up too spicy so it was a crowd pleaser.

Okay so I guess the theme today is jalapenos and Bacon together, because lets admit everything is better wrapped in bacon. These little guys will be coming with me and Seth to his work Christmas party tonight. I got the basis for this recipe from Sally's Baking Addiction, but changed it just a little. Instead of using fresh Jalapenos (which I prefer) I opted for using canned whole Jalapenos. When I went to the store the fresh jalapenos in stock were very tiny and thin and I knew they wouldn't work well for this recipe. I also left out the paprika, mainly because I couldn't find it in my pantry! Over all these are quick and easy and the cream cheese and jalapenos compliment each other perfectly.
